Tea Biscuits

Six cups of flour.

Four and a half teaspoons baking powder.

Three teaspoons salt.

Three ounces lard. Two and a half cups sweet milk.

Sift the flour, baking powder and salt together, then rub the lard into the flour, put in the milk and mix into a light dough. Do not work this dough very much, you will toughen it, roll out about half inch thick, cut with round cutter, set close together in pan, stick with fork and wash with cream or milk.

Baking Powder Biscuit

One quart flour.

Two rounding tablespoons baking powder.

One tablespoon salt.

One large tablespoon lard.

Sift flour, baking powder and salt together, mix in lard and pour in enough cold water or milk to make a soft dough, mix very light do not toughen by working, make dough just as soft as you can handle it, roll out to about half inch thick, cut with round cutter, put in pan and bake at once in hot oven.

Sweet Biscuit

Two pounds flour.

Half pound lard.

Two tablespoons baking powder.

Half pound sugar.

One pint milk. One teaspoon salt. Mix and sift together the flour, baking powder, sugar and salt, then add the milk, mix up very light but thoroughly, roll out about half inch thick, cut with round cutter and bake in hot oven.

Corn Muffins

Three-fourths cup sugar.

Three eggs.

Two and a half cups flour.

One and one-half tablespoonful baking powder. One-half cupful butter. Two and one-half cupfuls milk. One cupful corn meal. Cream sugar and butter, beat in the eggs, add milk and mix well, sift the baking powder, flour and corn meal together, and mix in. Fill in well greased moulds and bake in hot oven.

Wheat Cakes

Two eggs.

One-half of a teaspoonful of salt. One tablespoonful of sugar. One-half cup sweet milk. One teaspoonful baking powder. Flour.

Sift together the baking powder sugar, salt and about half as much flour as yon think it will take, beat up eggs well and mix in milk, mix all together and add enough flour to make a soft batter, heat the griddle iron, grease well and bake quickly.
