Required: Half a pint of boiling water.

One large tablespoonful of pearl barley. The rind of a lemon. Castor sugar to taste. A glass of wine.

Put the barley in a small saucepan, with enough cold water to cover, and let it boil for five minutes; this is to remove the slightly bitter taste from the barley. Next drain off the water. Put the barley back in the saucepan with the half-pint of water and the strip of lemon-rind. Let it simmer gently for half an hour; then strain out the barley, add the wine and sugar to taste, and serve very hot.
