Required: Half a pound of any cooked fish. One ounce of butter. One ounce of flour. Half a pint of milk or fish stock. One hard-boiled egg. One teaspoonful of lemon-juice. Salt and pepper. Mashed potato. (Sufficient for four persons.)

Break the fish into large flakes after removing all skin and bone. Melt the butter in a saucepan, stir in the flour smoothly. Then add the milk or fish stock, and stir the sauce over the fire until it boils well. Then add the fish, the egg cut in dice, salt, pepper, and lemon-juice to taste. Make this mixture thoroughly hot. Arrange the mashed potato in a neat border round a hot dish, marking it prettily with a fork. Pile the fish mixture neatly in the centre, and serve at once.

N.B. - Salt fish is excellent cooked this way.
