Required: One ounce of butter. One tablespoonful of cream. One large onion. One tablespoonful of cornflour. One clove of garlic. A small piece of cucumber. One ounce of ground almonds. One pint of vegetable stock. Half a pound of tomatoes. One ounce of proteid food.

Fry the onions, cucumber, garlic, and tomatoes in the butter, add the cornflour, stock, and almonds, and simmer for an hour. Pass through a sieve, return to saucepan, make very hot, and add the cream and proteid food. Serve with fried croutons of bread.
