Required: One lobster. One dozen prawns. Three tablespoonfuls of boiled rice. One ounce of butter. Half an ounce of flour. Half a pint of fish stock or milk. Two tablespoonfuls of tomato sauce or puree. One teaspoonful of anchovy essence. (Sufficient for four or five.)
Remove all flesh from the shell of the lobster, keeping that from the claws unbroken if possible. Cut the rest into rather large squares, and shell half of the prawns. Melt the butter in a saucepan, stir in the flour smoothly, add the milk, and stir the sauce until it boils, then put in the pieces of lobster, the shelled prawns, rice, anchovy essence, and tomato puree. Heat the. mixture thoroughly, and season it carefully. Arrange it neatly on a dish, and garnish it with pieces of meat from the claws in the centre and the rest of the prawns round, Cost, about 2s.
