Java Coffee (ground very fine).....

2 pounds.

Sugar............................

4 pounds.

Alcohol (deodorized)..............

2 pints.

Water...........................

6 pints.

Moisten the Coffee and pack in a suitable percolater; add the remaining liquid to thoroughly exhaust it. At a very gentle heat evaporate the Alcohol and add the Sugar. Make to the measure of one (1) gallon by adding thin, simple syrup,

Mocha Coffee.....................

4 ounces.

Java Coffee....................

4 ounces.

Sugar....................................................

7 pounds.

Water, Boiling, a sufficient quantity.

To the mixed coffee, first slightly moistened and packed in a tin percolator, add the Boiling Water until one-half (1/2) gallon of the product is obtained; in this dissolve the Sugar and strain, if necessary.

Sugar..........................

120 ounces.

Make an infusion, filter, add the sugar, dissolve and strain, if desired.
