Take 1 cup of cold cooked rice, 1/2 cup of nut milk, 1 egg, salt to taste. Beat the rice, milk, and yolk of the egg until they bubble, then fold in the stiffly-beaten whites, and bake immediately in cakes on a soapstone griddle. Serve like any griddle-cake.
