Chop one peck green tomatoes, 1/2 peck ripe tomatoes, six onions, 3 small heads cabbbage, 1 doz. green peppers, seeds re-moved; 3 red peppers; seeds removed; sprinkle with salt and put in a coarse bag; drain over night. In the morning put in a porcelain lined kettle, with two poinds brown sugar, 1/2 cup grated horse radish, 1 tablespoonful each ground black pepper and mustard, whole white mustard seed. mace and celery seed; cover with vinegar and boil till clear. Forty pounds green tomatoes, one doz. onions, three medium cabbage heads, two dozen apples, one-half dozen green peppers, one dozen red peppers; sprinkle cayenne and black pepper over; cbop all fine and sprinkle in salt (not too much); put in sack to drain over night. Then heat one-half gallon good vinegar and one-half cupful sugar; pour in ingredients, let come to a boil. Seal while hot. Very nice.
