Mince Meat

Nine large lemons, juice only; 12 or more large apples; 3 pounds raisins; 3 pounds suet; 6 pounds sugar 6 ounces candied peel. Chop all well and put in jars for use, not cooking it.

Chess Custard Pie

Yolks of six eggs; whites of two; beat very lightly; then add one and one-half cups sugar; two rounded tablespoons sifted flour; butter the size of two eggs; flavor with nutmeg. After this is all beaten thoroughly together, add one-half cup sweet milk. Hake slowly in rich pastry. Beat whites of four eggs and one and one-half cups sugar together until quite stiff; spread over tops of pies and brown nicely in a slow oven. This will make two pies.

Examiner Prize Recipe For Mince Meat

Two pounds nice lean beef, boiled, and chopped fine when cold; one pound mincci beef suet; five pounds juicy apples,. pared and chopped; two pounds seeded raisins; two pounds Sultanas (seedless raisins); two pounds dried currants; pound citron (chopped); three tablespoonfuls cinnamon; two of mace and one each of allspice, nutmeg and table salt; one-half gallon sweet cider; brandy if preferred. Mince meat made by this recipe will keep till spring.

5 Crackers, 1/2 Cup Butter, 1 1/2 Cups Of Sugar, 1/2 Cup Molasses, 1/2 Cup Of Vinegar, Juice Of 2 Or 3 Lemons And Grated Rind Of One, 1 Cup Chopped Raisin, 1 Teaspoonful Each Of Cloves And Cinnamon, 1/2 Nutmeg.

Cream Pie

1 pint milk, 1 cup sugar, scant half cup flour, 2 eggs. Let milk come to a boil; bout yolks and flour with a little cold milk; add boiling milk; let boil till it thickens; flavor. Bake crust and pour mixture in and put whites (sweetened and flavored) on top and brown.

Lena Armstrong. Lemon Pie

1 cup sugar, 1 cup boiling water, juice and grated rind of 2 lemons, flour enough to make of proper consistency, 2 eggs 1 piece of butter size of an egg. Boil sugar and water and grated rind of lemon and butter three or four minutes; add thickening and before removing from stove add unbeaten yolks of eggs; stir well. When cool, add juice of lemons and strain. Use whites of eggs for meringue.

Pie Crust

3 cups flour, 1 cup lard, 1 teaspoonful salt; rub flour, salt and lard together. Use ice water to make dough. Makes 2 pies.

Filling For Lemon Pie

3 eggs and 1 lemon. Use one whole egg and two yolks; one cup sugar, one cup water, one cop stale bread crumbs; beat whites for top; sweeten and flavor to taste.

Currant Pie

Three-fourths cup sugar, two eggs, one scant tablespoon flour, three tablespoonfuls water; mix into paste. Cup fresh currants; line pie tin with crust and bake before tilling. Mix sugar and yolks of eggs and flour together; then add water; then fruit. Boil till thick, stirring constantly to keep from burning. Fill crust; add whites, well beaten, to top and slightly sweetened. Brown in oven.

Bakers' Custard Pie

Beat the yolks of 5 eggs to a cream; stir thoroughly 1 table-spoonful sifted flour into 3 of sugar; add to it the beaten yolks, a little vanilla and a little nutmeg; last a pint of scalded milk and spoonful melted 1 utter; turn into a pie tin lined with paste, and bake. Beat the whites for top; add 3 teaspoonfuls sugar. When pie is done, put on top.

2 eggs beaten separately, 3/4 cup sugar, 2 tablespoonfuls flour, 1 quart milk, cinnamon and nutmeg. Bake one hour in a slow oven. Miss Lemon.

Grated Apple Pie

Grate apples, either sweet or sour; sweeten to taste and bake immediately in under crust, with bits of butter and sprinkling of cinnamon on top;

One cup sugar, one cup butter creamed together; add yolks of two eggs. Hake in one crust. Cover with pan while baking- Heat whites, four tablespoonfuls sugar for meringue. Makes two pies.

Juice and grated rind of one large lemon; 1 cup sugar, 2 tablespoonfuls corn starch, stirred- in juice; 1 cup boiling water, poured over mixture slowly and cook until clear. Then add the yolk of one egg, well beaten; fill the shells, and cover with a meringue of white, of egg and sugar, and return to oven for a few minutes,
