This is a quick light meal. Wilted spinach, bacon and tomatoes are tossed with penne pasta. Good for any season and will compliment anything. Makes 4 servings Ingredients: 1 (12 oz) package penne pasta 2 tablespoons olive oil, divided 6 slices bacon, chopped 2 tablespoons minced garlic 1 (14.5 oz) can diced tomatoes 1 bunch fresh spinach, rinsed and torn into bite-size pieces Directions:
