Cocoanut Pudding

Use receipt for Chocolate Pudding, substituting two-thirds cup cocoanut, fresh or shredded, for the cocoa.

Cereal Pudding

1 1/2 cups cooked cereal

1 1/2 cups milk

1 egg

1 1/2 cups diced apples

1/2 cup raisins

1 teaspoon cinnamon V2 teaspoon vanilla Few grains salt

6 tablespoons sugar

2 tablespoons sorghum

Mix together and bake according to directions for Baked Custard.

Apricot Betty

3 cups apricot pulp

2 cups crumbs

Into a buttered baking dish put alternate layers of bread crumbs and sweetened apricot pulp, commencing and ending with a layer of crumbs. Bake twenty minutes. Serve with plain or whipped cream, or with Brown Sugar Sauce.

Special Baked Apples

1/4 cup syrup 1/4 cup sugar 1 tablespoon cornstarch 1 cup water l tablespoon butter sub stitute

6 tart apples

4 figs

Core apples and fill with the chopped figs.

Place in deep baking dish. Heat remaining ingredients together, pour over apples and bake.

Raisin Sauce

1 cup raisins 1 tablespoon cornstarch 3 cups water

1 tablespoon butter substitute Sugar 1/4 teaspoon vanilla

Soak raisins over night. Simmer three hours. Thicken with cornstarch and cook until clear. Add vanilla, butter substitute, sugar (if necessary).

Junket

Junkets are very easily made and afford a wholesome dessert. Follow receipts on package.

Fruit Tapioca

1 cups water

1 1/2 cups fruit juice 2 tablespoons syrup 1/2 cup tapioca l cup fruit

Sugar

1/2 teaspoon flavoring

Cook tapioca in water and fruit juice until clear. Add other ingredients. Remove from stove and cool. If stewed raisins, figs or canned peaches are used, lemon juice should be the flavoring.

With sweetened fruits, sugar may not be needed.

Steamed Cherry Pudding

1 egg

2 tablespoons fat 1/8 tablespoon salt

2 tablespoons sugar 1/2 cup milk

1 cup flour

2 teaspoons baking powder 1 cup cherries (fresh or canned)

Mix together, turn into greased mold and steam two and a half hours. Serve with Sterling or Banana Sauce.

Steamed Carrot Pudding

1 cup sorghum or Orleans molasses 1 cup ground carrots 1 cup ground suet

1 teaspoon salt

2 teaspoons cinnamon 1 cup chopped figs

1 teaspoon cloves 1/4 teaspoon nutmeg 1/2 teaspoon vanilla 3/4 cup sour milk 1 1/2 teaspoons soda About 3 cups flour

Mix all together, using enough flour to make batter as stiff as it can be stirred. Turn into greased one-pound baking powder cans, cover, and steam three hours. Serve with Sterling Sauce.

Christmas Pudding

Use receipt for Carrot Pudding, omit the carrots and add 1 cup each raisins and dates. Citron, nuts and any fruits may be added if a richer pudding is desired.

Dessert Suggestions

Cracked nuts and raisins make an easy dessert to be served after a light dinner.

Dates (uncooked) with top milk, are delicious.
