405 - Tasty Pasta Salad

























405 - Tasty Pasta Salad

1 1/4 cups uncooked three color spiral pasta
1/4 cup chicken broth
3 tablespoons cider vinegar
1 TBSP canola oil
1 minced garlic clove
1 tsp. white sugar (you may add more to your taste)
1 tsp. dried basil
1/2 tsp. salt
2 cups broccoli florets
1 cup cherry tomatoes (each sliced in half)
1 large chopped sweet red pepper
1/4 cup grated Parmesan cheese

Cook pasta according to package directions and rinse under cold water--drain. In a large bowl, whisk together the broth, vinegar, oil, garlic, sugar, basil and salt. Add pasta, broccoli, tomatoes, pepper and Parmesan--toss to coat. Refrigerate until chilled.
