698 - Baked Taco Potatoes

4 baking potatoes
1lb. ground chuck
1 tsp. chili powder
1 tsp. salt
1/2 tsp. pepper
1 cup salsa
1/2 cup shredded cheddar cheese
1/4 cup sour cream
Optional--crushed taco chips

Wash the potatoes and prick them all over with a fork. Microwave the potatoes until
tender. While potatoes are baking heat a skillet over medium heat--add beef, chili
powder, salt, and pepper--cook until beef is browned. Add the salsa to the beef--stir
and heat until hot. Cut a slit down the middle of each baked potato. Scoop beef
mixture evenly on each potato, then top each with shredded cheese, sour cream and
crushed taco chips.
