Cottage or Neufchatel cheese may be made into little balls and dipped in chopped parsley decorated with pimento for a very pretty salad. Another cheese ball may be made by grating one and one-half cups of cheese and mixing with it two level tablespoons of flour, a little paprika or even cayenne pepper, one-fourth teaspoon of salt, and the whites of three eggs. Stir all these ingredients together thoroughly and shape into balls, then roll in beaten yolk of eggs and cracker crumbs and fry in hot lard. This amount will make two dozen balls and they may be used with various salads.
