One pound of ground Brazil nuts stewed for twelve hours in two quarts of water; flavour with celery and a few fried onions. Add one quart of boiling milk. Pass through a strainer, season, and serve with fried bread dice.
A nourishing dish for a child or invalid is good bread sauce to which has been added two ounces of ground almonds, well pounded in a mortar. Serve with fried dice, or spinach.
Baked almonds slightly salted, and ground, make excellent sandwiches.
