Required : Quarter of a pound of castor sugar.
Quarter of a pound of butter. Quarter of a pound of flour. - Half a pound of ground rice.
One teaspoonful of baking-powder.
About half a gill of milk.
Four eggs. Take two extra teaspoonfuls each of flour and castor sugar and mix them together. Well grease some patty tins, put a little of the mixed flour and sugar in each and shake it all over so as to coat the inside of the tin with it; shake out all that does not stick. Next mix together the flour, baking-powder and ground rice. Put the butter and sugar in a basin and beat them to a cream, then add the eggs one by one, beating each in separately; lastly, stir in the flour, etc., very lightly, and the milk. Fill the tins about two-thirds full of the mixture, put them on a baking - tin in a moderate oven, and bake them from ten to fifteen min-utes. When they are done lift them carefully out of the tins and put them on a sieve to cool. Cost, 11d.
