Cooked string beans, 2 tablespoons,
Eggs, well beaten, 4,
Grated Parmesan cheese, 2 tablespoons,
Melted butter, 2 tablespoons,
Salt and pepper.
Cut the beans fine, and stir them into the eggs which have been well beaten together; then add the cheese, and season with pepper and salt to taste.
When perfectly mixed, put the whole with the butter, into the omelette pan, and fry a pale brown. The time varies from 3 to 5 minutes.
