Orange peel, Sugar.
Soak the orange peel for 3 days in cold water, changing the water each day. Then put the peel in hot water, and boil until soft. Squeeze as dry as possible; chop fine and weigh it.
Take the same weight of sugar, and boil it with a little water until it hairs. Then add the chopped peel, boil a few minutes longer, take from the fire, cool, put on a baking-board sprinkled with granulated sugar, and mold into small balls. Roll these in sugar, and spread on a plate to dry
