This is a mixture composed of various articles, such as sweetbreads, fat livers, tongue, ham, champignons, truffles, etc, previously dressed, cut into dice, and cooked in some rich sauce, and seasoned with pepper, salt, nutmeg, cloves, shallots, sweet herbs, and a little butter; take care that all the articles are sufficiently boiled before they are cut up. Many things, such as beef-palate, fowl, cocks'-combs, indeed almost any article you please, may be added to the above.
