Potato Flour Cake

2 eggs.

1 tablespoon cold water.

1/3 cup sugar.

1/2 cup potato flour.

1 teaspoon baking powder.

teaspoon salt.

teaspoon vanilla.

1 tablespoon melted butter.

Add water to eggs and beat until light. Then add sugar, gradually, while beating constantly. Mix and sift dry ingredients, combine mixtures and add vanilla and butter. Turn into a buttered and floured cake pan and bake in a moderate oven twenty-five minutes.

Prize Cake

Yolks 4 eggs Whites 2 eggs 1 cup sugar.

2 cups flour.

2 1/2 teaspoons baking powder.

1/2 cup milk.

1/2 cup melted butter.

Put egg yolks and whites into a bowl and beat until thick, using a Dover egg beater; then add sugar gradually, while beating constantly. Mix and sift flour and baking powder and add alternately with milk to first mixture; then add one-third cup melted butter. Turn into a buttered and floured shallow cake pan and bake in a moderate oven thirty-five minutes.

This mixture is well adapted for reception cakes. It may be cut into small squares, oblongs, triangles, or any desired shapes, dipped in Oscar's Frosting and decorated with candied fruits, candies or ornamental frosting.
