Honolulu Fizz

For each service allow: 1/2 cup pineapple juice, 1/2 cup sparkling cider, 1 egg white, tiny spray mint crushed. Put ingredients into a shaker or jar and shake vigorously for 3 or 4 minutes. Pour at once over crushed ice.

Fruit Cup

1 quart cooked sweetened loganberries. 3 lemons (juice only).

1 cup sugar.

1 cup water (ice water).

Boil sugar and water 5 minutes; cool, add fruit and lemon juice and let stand about 2 hours. Strain and dilute with ice water to the desired strength.

Lemon Whey

1 cup hot milk.

1/2 lemon (juice only).

1 tablespoon sugar.

Add lemon juice to milk and cook over a very low fire or in a double boiler until whey separates. Do not stir. Strain through a cheesecloth, add sugar and chill. Serve with thin slices of lemon. A very refreshing drink.

Fruit Punch

6 lemons (juice only). 6 oranges (juice only).

1 cup grated pineapple.

2 cups strawberry syrup.

1 cup Maraschino cherries.

2 cups freshly made tea. 2 1/2 cups sugar. 1 1/2 cups water. 1 quart apollinaris. 1 gallon ice water.

Boil sugar and water five minutes. Cool and add tea, fruit juices, syrup and pineapple. Let stand one hour, then strain. Add ice water and pour over a large piece of ice. Then add apollinaris and cherries. Sufficient for 40 persons.

Southern Punch

4 cups strong tea.

2 oranges (juice only).

2 lemons (juice only).

1 cup sugar.

1 cup boiling water.

1 banana.

Boil sugar and water 5 minutes. Cool and add orange and lemon juice. Allow 4 level teaspoons tea to 4 cups of freshly boiled water. Add a small piece of orange rind and let stand 5 minutes. Strain and cool. Combine mixtures. Pour over crushed ice and add 2 or 3 thin slices of banana to each glass.

Orangeade

2 cups sugar.

2 cups orange juice.

1 quart water.

1/2 cup lemon juice.

Boil sugar and water 5 minutes, adding orange rinds. Strain, chill, add fruit juices and dilute to taste with ice water. A mint leaf may be added to each glass. Sufficient for a dozen glasses.

Pineapple Lemonade

1 cup grated pineapple. 3 lemons (juice only). 1/2 cup hot water.

1 1/2 cups sugar. 1 quart ice water.

Boil sugar and hot water about 5 minutes. Cool, add pineapple and lemon juice. Strain. Add ice water and serve. This makes about 15 glasses.

Grape Punch

1 cup grape juice.

2 lemons (juice only). 2 oranges (juice only).

1 orange cut in thin slices.

2 quarts of water. 1 1/2 cups sugar.

Boil the sugar and water for 5 minutes. Cool, add remaining ingredients and pour over cracked ice. Sufficient for 16 persons.

College Punch

1 cup grated pineapple.

2 quarts boiling water.

2 cups freshly made tea. 6 lemons (juice only). 6 oranges (juice only).

1 quart fruit juice (grape, loganberry or strawberry). 4 cups sugar. 1 quart apollinaris.

Cook pineapple, sugar and water together about 15 minutes. Strain and cool. Add fruit juices and tea. An hour or so before serving pour over cracked ice and add apollinaris. Will serve about 40 persons.

California Punch

1 quart cooked apricots

(canned or dried).

2 cups sugar. 2 cups water.

1 quart apple juice or apple cider.

2 oranges (juice only). 2 lemons (juice only).

Rub the apricots through a coarse sieve. Boil sugar and water together for 5 minutes, then add apricot pulp. Chill. Let stand at least 2 hours, then pour over cracked ice. Sufficient for 25 punch cups.
