Green Tomato Mince Meat

1 peck green tomatoes 1 peck apples 1 package raisins

1 package currants

5 pounds brown sugar

2 cups molasses

2 cups vinegar 11/2 cups suet (chopped) 2 tablespoons cinnamon 2 tablespoons nutmeg 1 tablespoon cloves

Method :

Cut tomatoes through chopper, scald and drain three times, Peel and chop apples. Cook one-half hour and can.

1 quart chopped beef (boiled first)

1 quart each of raisins, currants, sugar, molasses, boiled cider (2/3 vinegar and 1/3 water.) 11/2 pints chopped suet 3 quarts chopped apples 6 teaspoons cinnamon

2 teaspoons cloves 2 teaspoons nutmeg 1 tablespoon salt

Method :

Cook all together and can as you would fruit.

Peach Cream Pie

1 heaping cup sliced peaches

1 cup sugar

2 egg yolks

2 tablespoons flour 2 tablespoons water

Method:

Mix flour, sugar and peaches. Put in pie crust in moderate oven and bake one hour. Use the whites of the eggs for a meringue and pile on top and brown.

Strawberry Pie

2 boxes of strawberries

11/4 cups sugar

4 rounding tablespoons flour

2 beaten eggs

Method :

Mix strawberries with sugar and flour. Add beaten eggs. Place in pie crusts (uncooked) and bake slowly one hour. Put collar of white cloth around pie to keep from running over.

Raisin Pie

1 cup sugar 1 tablespoon flour 1 lemon, juice and rind Bake between crusts. Enough for one pie

1 cup seeded raisins

1 cup cold water

2 tablespoons melted butter

Raisin Pie

1 cup seeded raisins

2 tablespoons sugar

1 teaspoon vinegar 1 tablespoon butter

Method:

Cook raisins and sugar in enough cold water for one pie; add vinegar, and in a minute add butter. Mix while cooking. Then bake in two crusts. Makes one pie.

Custard Pie

3 eggs

1/2 cup sugar, scant

2 cups milk salt

1/4 teaspoon nutmeg

Method :

Beat eggs well, then add sugar, salt, nutmeg, and milk. Pour into unbaked crust. Bake till it thickens.

Chocolate Pie

1 cup milk

1 square chocolate (bitter) cald together, add 2 egg yolks slightly beaten 31/2 teaspoons cornstarch mixed with 1/8 cup of the milk 1/2 teaspoon vanilla

11/2 teaspoons butter 1/2 cup sugar

Method:

Cook ten minutes, stirring constantly, till thick. Put in baked crust when cool. Use whites of 2 eggs and powdered sugar for meringue. Brown in oven.

Cream Pie

1/2 pint cream

2 tablespoons sugar mixed with 1 tablespoon flour

1/2 pint milk pinch salt

Method:

Mix all together and cook in double boiler. Add flavoring and remove from fire. When stiff, fill a shell and make a meringue of the white of an egg. Brown lightly in the oven.
