Peel and quarter
6 medium potatoes
In covered pan heat about 1 inch salted water to boiling. Add potatoes and bring to boil, then turn down heat and cook slowly about 20 minutes, until potatoes are tender when pricked with a fork. Drain remaining water or boil dry.
Mash with potato masher or electric mixer.
Add
1/2 cup hot milk 3 tablespoons butter 1/4 teaspoon salt
Beat until light and fluffy.
6 servings.
