2 cups bran 1 cup flour 1 teaspoon soda 1/4 cup butter
3 tablespoons molasses 1 1/4 to l 1/2 cups sour milk 1 cup chopped dates
Mix dry ingredients, rub in the butter with the tips of fingers, add molasses and sour milk and the chopped dates first rolled in flour. Put into hot muffin tins, and bake in hot oven. 1 unbeaten egg stirred in thoroughly at the last improves it greatly. Sweet milk may be used, with 3 teaspoons baking powder, instead of sour milk. 1/3 cup butter or crisco
1/4 cup sugar
1 egg, well beaten
1/3 cup dates cut into bits
3/4 cup of milk
2 cups flour
4 teaspoons baking powder
Add dates last, and beat well. rut in well greased muffin pans, and bake twenty-five minutes.

2 tablespoons shortening 2 tablespoons sugar 1 cup milk 1 3/4 cups flour
3 teaspoons baking powder 1 teaspoon salt 1/2 pound dates
Melt shortening and add sugar. Beat until well mixed. Add milk and flour, baking powder and salt which have been sifted together. Add dates which have been pitted and cut fine. Bake in greased tins in hot oven about twenty-five minutes.

1 1/2 cups yellow cornmeal 1/2 cup white flour
1 teaspoon salt
2 teaspoons baking powder
1 tablespoon shortening
2 eggs (1 may be used when scarce)
2 cups sour milk
1 cup semi-dry dates, cut fine
Fans must be well heated, and greased with 1 tablespoon shortening. Bake in muffin pans in a hot oven for twenty minutes.
