Butter, treacle, and sugar, 1 tea-cupful of each; 1/2 a teacup of cold water, 1 table-spoonful of ground ginger; soda dissolved in water, and cinnamon, 1 teaspoonful of each; flour to make a stiff batter.
Melt the butter, slightly warm the treacle, sugar, and spice, and beat together for ten minutes; then add the water, soda, and flour. Stir well, make into three small loaves, and bake in a moderate oven.
1 1/4 lb. wheat meal, 1 lb. treacle, 1/4 lb. sugar, 1/4 lb. butter, 3/4 oz. caraway seeds bruised, 3/4 oz. ginger, 3/4 oz. lemon peel, 1/2 pint of new milk, 1 teaspoonful of soda.
Mix the dry ingredients, then add the treacle and milk, in which the soda should be dissolved. Bake in a buttered tin in a very slow oven.
1 lb. of flour, 6 oz. butter, or good beef dripping, 1 oz. ground ginger, 4 oz. brown sugar, 1/2 teaspoonful of cloves and mace, pounded, 3/4 lb. treacle, grated lemon or candied peel, if liked.
Work the butter or dripping into the flour, then add the ginger, sugar, cloves, and mace; next add 3/4 lb. of treacle, or rather more if necessary; roll out the paste, cut with a round cake-cutter, and bake on a floured tin in a slow oven.
