Potatoes go very nicely with fish, and this is the way to prepare peeled or boiled potatoes: Thoroughly wash the required number of potatoes and peel them very thin, and lay them in cold salted water; while the potatoes are being peeled, put some water in a saucepan over the fire, with a level tea-spoonful of salt to about a quart of water; after the potatoes are peeled, put them into the boiling water and boil them until they are tender enough to be pierced easily with a fork; then drain them, put over them a clean towel folded several times, set the saucepan on a brick on the back of the stove, where the potatoes will keep hot without burning, and let them stand until they are required for use.
