Boil one quart of sugar in two quarts of water half an hour, making a syrup. Let it get quite cold. Mash three boxes (a short three quarts), of strawberries, so that all the strawberries are broken and they are mashed rather fine. Add the cold syrup; freeze, stirring hard half an hour. If two or three quarts, are made, the cylinder form of the ice cream machine looks very well. In this case, take out the dasher when the cream is frozen and smooth the cream into shape at top, when packing away; or, the cream can be packed away, pressed into another mould. Serve with whipped cream around the mould.

Raspberry Ice Cream, made as last receipt, is especially good.
