2 quarts corn meal 1 quart mashed potato 2 tablespoons soda 2 tablespoons salt

3 quarts sour milk 1/2 quart sweet milk 8 egg yolks 8 egg whites

Sift dry ingredients. Beat yolks, add mashed or riced potato, beating until smooth and thoroughly mixed. Add milk, and combine with dry ingredients. If left-over mashed potato is used, it will probably be necessary to omit part of sweet milk. Fold in stiffly beaten whites. Cook on moderately hot griddle.
