Brown Butter Pie

Brown in a pan, 1 large tbsp. butter, add 1 cup milk and 1/2 cup water, and let come to a boil. Mix 1 cup light brown or white sugar, 2 egg yolks, 3 tbsp. flour. Stir into the hot butter and milk and boil together. Use whites for top Makes 1 large pie.

Butter Scotch Pie

1 cup brown sugar, 1 cup milk, 1 tbsp. corn starch, yolks of 2 eggs, butter size of an egg, vanilla flavoring.

Cream eggs and sugar and add milk. Let come to a boil and add cornstarch, dissolved in a little water. Boil a few minutes, add butter, remove from fire and flavor. Place in baked crust with beaten whites over top.

Cream eggs and sugar, add milk, let come to a boil, add butter, remove from fire, add flavor. Place in a baked crust; cover with beaten whites of eggs. Brown in oven. - Mrs. L. D. Trabert.

Butter-Milk Pie

1 cup sugar, 2 eggs, 1 cup buttermilk, 1 cup raisins, 1 tbsp. vinegar, 1/2 tsp. each of cloves, allspice and cinnamon. This makes 1 large pie.
