Plain Pumpkin Pie.
Pare a good pumpkin or squash and cut into strips, and steam in a colander over a kettle of boiling water. When perfectly tender, pass through a coarse sieve. To each pt pumpkin add 1 cup sugar, 3 well-beaten eggs, 1 pt rich milk, and
1 teasp each of cinnamon and ginger, and 1/4 teasp nutmeg. The spices can be omitted if liked. Mix well and bake in deep pie tins lined with thin pastry, until a golden brown.
