One cup of milk, one level tablespoonful of corn starch, one-quarter teaspoonful of soda, one rounding tablespoonful of butter, three eggs, one-half teaspoonful of salt, one-quarter teaspoonful of paprika or a speck of cayenne, three-quarters cup of grated cheese.
Put the milk into a double boiler, add two tablespoonfuls of milk to the corn starch and add to the scalded milk, dissolve the soda in a teaspoonful of boiling water and add. Cook about five minutes. Remove from the fire, add the cheese and butter and when these are melted, the seasoning and the eggs, which have been beaten until frothy. Pour into buttered custard cups, bake in a moderate oven until well puffed up and brown and serve at once.
