Kidney Stew

1 large beef kidney 1 tablespoon flour 1 tablespoon butter

1 onion Pepper and salt

Wash the kidney and cook slowly in salt water until tender. Use just enough water to cover but change the water three or four times. Retain the last water.

Slice the onion thin and fry in the butter to a light brown, add the flour. Add the water and a little Worcestershire sauce. Add the kidney cut into pieces and cook together for ten minutes.

Hamburger Steak with Spaghetti

1 pound ground round steak

3 large onions

1/2 cup beef fat

2 tablespoons olive oil

6 green peppers

1 quart can of tomatoes

1 pound spaghetti

1/2 pound grated cheese

1  cup chopped olives

2 tablespoons chopped parsley

Peel and chop the onions and brown with the chopped meat in the fat and olive oil. Add the chopped peppers, tomato, parsley, salt and pepper. Simmer for two hours. Add olives during last half hour of cooking. Cook long enough to evaporate the juice of the tomatoes and leave a soft paste. Cook the spaghetti in boiling salted water. Cook until tender and drain. Put the spaghetti on a platter, pour the meat and tomato sauce over it and cover with grated cheese. Place in the oven and allow the cheese to melt in. Serve.

Jellied Meat Loaf

(Chicken, veal, beef or ham)

2 cups chopped meat

2 cups soup stock

2 tablespoons granulated gelatine

1/2 cup cold water

1 teaspoon chopped onion

Chopped celery, green or red pepper chopped, chopped parsley Soften gelatine in cold water for five minutes. Boil soup stock and add to gelatine. Chill. When gelatine mixture starts to stiffen, add the chopped meat and chopped onions, pepper and parsley. Chill a loaf mold, turn in the mixture and allow to become perfectly stiff by chilling. Remove from mold, slice and serve. Thinned gravy may be used in place of the soup stock.

Chili Con Carne

1 pound of beef, cut into small pieces

3 dried sweet peppers

1 cup red kidney beans

1/2 cup canned tomato

1 tablespoon butter

1 onion

1 cup water

1/2 teaspoon paprika

Salt and pepper

Melt the butter in a frying pan, fry the meat, sliced onion and peppers until browned. Add the water, tomato, and seasoning and cook until the meat is tender. Drain the canned kidney beans and add to the meat. Thicken with flour and serve. Dry kidney beans may be used. Soak for several hours in cold water. Cook until tender with one-half teaspoon soda, drain and add to the meat.

Beef Loaf

2 pounds ground beef

1/2 pound ground pork

1 onion, grated

1 tablespoon salt

1 teaspoon pepper

1 tablespoon melted butter

1 cup of thick cream sauce or

2 eggs

1 cup of dry bread crumbs or

12 large crackers

1 cup of canned tomatoes Small amount of dry celery tops

Mix all together into a loaf with few strips of bacon or pieces of suet on top. Place in a heavy baking pan, quite hot at first. Finish baking in a slow oven, 45 minutes to one hour. To make thick cream sauce use three tablespoons flour, one cup liquid and two tablespoons butter. Cook until thick, then add to meat.
