Scald two cups of milk in double boiler, then add to it one square of Baker's chocolate that has been broken up in pieces, two tablespoonfuls of sugar and a pinch of salt. When the chocolate has dissolved, add a few drops of vanilla if you like. Beat with a Dover egg beater for a few minutes and serve at once Put a teaspoonful of whipped cream in the cup before pouring in the chocolate.
For each cup of chocolate use one cupful of milk and one bar of chocolate. Put the milk in a sauce pan, porcelain-lined, break the chocolate in small pieces, add to the milk, stir constantly with a wooden spoon until the chocolate is dissolved, and the milk has boiled up once. Add more hot milk if too rich. Beat vigorously. Serve at once.
