To each quart of fruit allow a heaping tablespoonful of granulated sugar. Pour a little water into your kettle to prevent the contents from burning, then put in a layer of peaches, a sprinkling of sugar, another layer of peaches, more sugar, and so on until the kettle is full. Bring slowly to a boil, which may continue for three minutes. Can and seal.
