Four ounces pearl barley, two quarts water. Thoroughly wash the barley, add the water and boil till reduced to one quart. Strain through hair-sieve (or muslin) previously scalded, and press through some of the barley to thicken. Time to reduce, three to four hours. Can be flavoured with lemon peel and juice, sugar or honey, apple peel and pips, or any fruit juice. Stewed rhubarb juice is good.
