1/2 lb. loaf sugar, sixteen or eighteen oranges, two lemons, 1 oz. gelatine. Boil the sugar to a syrup, pour it, boiling hot, on the thinly-pared rind of two oranges, squeeze the juice of all the oranges and lemons, pass through a fine sieve. Add the dissolved gelatine and syrup and a few drops of cochineal; ice, and serve. This may not be stiff enough to serve in a shape, but it is much nicer than when stiffened with more gelatine.
