One pint oysters, 1 1/2 pints cold water; 1 pint sweet milk, butter, salt and pepper. Put oysters in cold water and boil well for 20 minutes; season and add milk. Let all become hot, but do not boil after adding milk. This will serve 4 persons. Mrs. Ludlow.
Pick over and wash 1 quart oysters. Scald 1 pint milk. Strain, boil and skim oyster liquor; when clear add oysters. Cook till oysters are plump and well ruffled; take from fire, add hot milk, salt and pepper. This may be varied by addition of a little chopped celery or onion. Mrs. J. Devlin.
