Roast them well, take off the husks, dissolve four ounces of lump sugar in a wine-glass of water, then add the juice of a lemon. Put the chesnuts into this liquor, and stew them over a slow fire for ten minutes; add sufficient orange-flower water (if approved) to flavour the syrup; grate lump sugar over them, and serve up quite hot.
