This type of wine is produced when at the beginning of the development the alcoholic content of the wine is so high as to prevent the growth of the fungus or flor which exists in the fino type of sherries. The oloroso wines, therefore, present those characteristics of aroma and flavor by which we easily determine whether or not a wine is of the sherry type.
