Split and bone eight selected smelts, sprinkle with salt and pepper, roll in flour and saute in butter. Remove serving dish, pour over Beurre Noir and sprinkle to with one-half tablespoon finely chopped parsley.
To fat in pan add two and one-half tablespoons butter and stir until well browned; then add one teaspoon lemon juice and a few grains, each, salt and pepper. Strain over fish.
