Chocolate Pie

Scald 1 c milk, add 3 T grated chocolate or cocoa and 2 T corn starch mixed with a little cold milk, add 1/2 c sugar and cook until thick. Add pinch of salt and yolks of 2 eggs well beaten and cook 5 min. Flavor with 1 t vanilla and beat in the whites of 2 eggs whipped stiff. Pour into a pie crust shell (see p. 131) and bake in a moderate oven until firm.

Mock Mince Pie

Chop together 1 c raisins, 1 c rhubarb and 1 c sugar, add 1 egg well beaten, the juice and rind of 1 lemon and 1 T butter. Line a shallow pie pan with pastry, (p. 130) fill with the mixture and sprinkle a little flour over the top and apply the top crust. Bake in a moderate oven 45 min.

Mince Pie

Fill a shallow plate lined with plain paste with mince meat, cover with an upper crust made either of plain or puff paste, and bake in a moderate oven.

Apple Pie

Line a deep pie plate with plain paste (see page 130). Pare, core and cut 4 or 5 sour apples into eighths, and spread on the plate until filled. Mix 1/3 c sugar, 1/4 t nut- meg, 1/8 t salt, 1 t lemon juice, and a few gratings of lemon rind together and sprinkle over the apples. Dot with 1 t butter. Wet the edges of the lower crust, put on the upper crust, and press the edges well together. Cut a few slashes in the upper crust to allow steam to escape and bake 40 to 45 m in a moderate oven.

If desired the butter, lemon juice and rind may be omitted and cinnamon substituted for the nutmeg. Also dried apples which have been soaked for 12 h or more may be used in place of the fresh fruit.

Pumpkin Pie

Pare and cut into small pieces sufficient pumpkin, and steam until tender, or about 1 h. For each pie put enough pumpkin through a colander to make 1 1/2 c pulp. To this add 2/3 c brown sugar, 1 t cinnamon, 1/2 t ginger, 1/2 t salt, 2 beaten eggs, 1 1/2 c milk and 1/2 c cream. Mix well together, and pour into a pie plate lined with plain paste. Do not use an upper crust. Bake in a moderate oven until the custard is set and the crust browned. Care must be taken that the oven is not too hot, as the custard is then apt to curdle.
