No. 502. - This is a most valuable esculent, little known in this country. It grows rapidly and has creeping habits. The flowers, which are white and grow in clusters, have a cinnamon fragrance. The root is of a pale russet color, oblong, regularly rounded, and globe shaped, being largest at the lower end. The flesh is remarkably white and very mucillaginous in its good state. When boiled or roasted they possess a rice-like taste. They are quite farinaceous and nutritive, being much whiter and finer grained than our potatoes.
