Sardines, 4. Eggs, 4.
Paprika. Butter, 1/4 cup.
Fried bread.
Skin and bone sardines. Hard boil the eggs and mince the yolks, add them with a dash of paprika and the butter to the fish. Pound ingredients together with a potato masher. Cut slices of bread 1/4 inch thick and fry golden brown in deep fat. Drain and spread with sardine paste. Garnish with olives.
Toast.
Cut toast in rounds to fit slices of tomato. On each piece lay a thick slice, and in the centre put a spoonful of mayonnaise.
Crabmeat, 1 cup. Salt, 1/2 teaspoon. Cayenne, a few grains.
Butter. 2 tablespoons. Lemon juice, 2 teaspoons. Grated cheese, 2 tablespoons.
Hot toast, 8 slices.
Cream butter, add flaked crabmeat, lemon juice and season-ing. When well blended spread on toast, sprinkle with cheese and put in oven to brown. Serve hot.
Cucumbers, 2. French dressing.
Onion, 1.
Chutney syrup, 2 tablespoons.
Olives.
Slice the cucumbers fine and marinate for 20 minutes in French dressing, to which the juice of the onion has been added. Drain and add the Chutney syrup. Spread on slices of toast and garnish with olive rings.
Tuna fish, 3 tablespoons. Horseradish, 2 tablespoons. Pepper and salt.
Sour cream.
Bread crumbs, 2 tablespoons.
Toast.
Hard boiled egg.
Mix fish flakes and horseradish to a soft paste with sour cream, add crumbs previously fried in butter and drained. Beat all to-gether, spread on rounds of toast and garnish with chopped hard boiled egg.
Onion, 1/2 tablespoon. Butter, 3 tablespoons. Chopped mushrooms, 1-3 cup
Flour, 2 tablespoons. Cream, 2-3 cup. Salt.
Toast.
Fry the onion, chopped, in the butter, add mushrooms and cook 5 minutes. Add flour and stir till well blended. Pour on the cream, stirring all the time, season with salt and serve on squares of toast.
Cut thin slices from a loaf of Vienna bread, spread lightly with butter, grate a little cheese over them, sprinkle with cayenne and salt, and put in oven for 5 minutes.
Spread small slices of bread with butter, and toast. Pile on each a tablespoon of canned caviar and grate a little onion over the top.
