To four quarts rain water put one pound of coarse brown sugar, or one pint of molasses. Boil it well and skim it; pour it into a tub, and add one quart of rain water to each gallon of the above, then take a slice of well raised bread, toast it brown, and cover it well with yeast, put it in a tub, cover it with a cloth, and let it remain four or five days to work, then pour it off into a good cask. Roll up a sheet of white paper and put it in the cask for mother. Let it stand four or six months. If not sour enough add one gallon of whiskey. To keep vinegar put in all slops of tea, brandy, wine, lemonade, and scum of preserves.
