Use baking sheets or large meat pans. The pans may be turned bottom side up. Brush thoroughly with oil or melted fat, but never flour them. Allow from one to two inches of space between cookies. Brush off loose flour. Bake on lower grate of oven until about half done; finish on upper grate. If cookies do not bake evenly, remove those that are done from pan, and put the others back to finish baking.
