1 pound maple sugar 2 egg whites

1/2 cup boiling water 2 cups walnut meats

Cut sugar as fine as possible; add water, and boil to soft ball stage. Cool slightly, beat into stiff whites, and continue beating until mixture is of consistency to spread. Add half of coarsely chopped nuts, spread on crackers or unsweetened wafers; sprinkle with remaining nuts. Serve with coffee, or for afternoon tea.
