1 1/2 cups oil 1 1/2 cups sugar 14 egg yolks or 7 whole eggs 1 1/2 cups maple syrup 1 1/4 cups hot water

2 cups potato flour 4 3/4 cups barley flour

3 tbspns. baking powder 1 2/3 teaspoons soda

1 3/4 teaspoons ginger 1 teaspoon salt

Sift dry ingredients together. Cream sugar and oil, add well-beaten eggs and maple syrup, beating hard. Add dry ingredients alternately with hot water. Bake in shallow pans.
