2 1/2 cups rice
2 quarts boiling water
3 quarts milk 1 1/4 cups sugar
1 tablespoon salt
10 egg yolks
3 tablespoons margarine 2 cups raisins 1 cup candied orange peel chopped
Wash rice; add to boiling water to which salt and fat have been added; boil one minute. Add to hot milk, and cook in double boiler until rice is soft. Add sugar and fruit, and cook a few minutes longer. Turn rice mixture into well-beaten yolks, stirring constantly. Turn into molds which have been dipped in cold water; chill. A little orange extract may be added if desired. Serve with plain cream or Soft Custard Sauce.
