Spoon Bread

1/2 teaspoon baking powder

1  cup yellow cornmeal


2 cups milk

1 tablespoon butter

1 teaspoon salt

2  cups boiling water

Pour hot water over cornmeal, stir well and allow to cool oft. Beat eggs well and add melted butter, salt and milt Stir well. Pour into baking dish and bake three-quarters of an hour in a moderate oven. Serve from the dish with a spoon.

Raisin Bread

1/4 cup raisins 1 pint hot milk 1 egg 8 cups flour

1/3 cup butter or substitute

1/2 cup sugar

1 teaspoon salt

1 cake compressed yeast

Dissolve yeast in 1/2 cup lukewarm milk. Place butter, sugar and salt in mixing bowl and add rest of hot milk. Allow to cool to tepid temperature then add beaten egg and the dis solved yeast.

Add flour and turn out onto a floured board. Knead well, adding raisins. Return to the bowl, cover and allow to stand in a warm place to rise. Form into loaves and bake in a moderate oven (350 degrees F.) for three-quarters of an hour or until the loaves are nicely browned.

Wheat Bread

6 1/2 cups flour 1/2 ounce compressed yeast 2 cups scalded milk or boiling water

1 tablespoon sugar 1 tablespoon salt 1 tablespoon butter or sub-stitute

Makes two loaves

Dissolve yeast in 1/2 cup lukewarm water. Place sugar, salt and butter in large mixing bowl; pour on the hot milk. Add five cups flour to the yeast paste and stir well. Add last cup of flour and knead the dough until soft and pliable. Return to the bowl, cover and allow to stand in a warm place until the dough rises to almost twice the original size. Place on floured board, divide the bulk in two and knead each

Shape into loaves and place in floured bread pans. Stand once more in warm place and allow to rise again to twice original bulk. Test the oven: if a piece of paper turns dark brown within five minutes, the oven is "hot" and the right temperature for baking bread. Bake the bread for one hour at constant temperature.

Remove loaves from pans and let stand in current of air to form hard crust.

Light Nut Bread

3/4 cups sugar

1 teaspoon salt

4 cups flour

4 teaspoons baking powder

1 egg

2  cups milk

1 cup nuts, cut small

Mix dry ingredients, add egg and milk and bake in moderate oven.

Whole Wheat Bread

4 cups whole wheat flour 1 cake compressed yeast 1 cup boiling water 1 cup milk

1   cup wheat flour

2  teaspoons salt

2 tablespoons sugar

Dissolve yeast in a little lukewarm water.

Mix hot water with milk and add enough flour to make a thin batter. Beat this well to let in air bubbles. Add sugar and salt. Let stand in warm place until dough rises. Stir in more flour, knead well, making a light dough. Mold into loaves, place in buttered pans and allow to stand in warmth to rise once more.

Bake in a moderate oven (350 degrees F.) for about 1/2 hours.

One half cup nuts and one half cup raisins may be added to the batter if desired.
