Get from the chemist 1/2 lb. ground turmeric, 1/2 lb. roasted and ground coriander seed.Mix and keep in a bottle.

Soak a pint of lentils in cold water overnight. In the morning shredtwoor threeonions,brown themin clarified butter, and add a tablespoonful of the mixed powder. Strain the water off the lentils, and put them in a saucepan with some stock or milk, and the browned onions, &c. Put on the lid and simmer gently till the lentils are quite soft. If they get at all dry, add a little more stock or milk. Serve with a separate dish of boiled rice as for curry. The cooked Dal can be kept in a basin, and warmed up when required. Pepper and salt may be added if liked. The Dal should be about the consistency of thinnish porridge.
